Pans are portable and air dry so there is no need to dispose of any unused paint, they are invaluable when working outside or when needing to work quickly. Simply lift colour with a wet brush.
Tubes are perfect for working at a large scale with a quicker release. You can use large quantities in one go, which is particularly helpful with a restricted palette.
